My Experience

I have studied a double degree program in Pharmacy and Nutrition and Dietetics, during the final year of my undergraduate degree I acquired different kind of experiences collaborating with different research groups in academia and food industry. After my Bachelor, I did an Erasmus Traneeship in Teagasc Food Research Centre in the department of Food Chemistry and Technology. I was working on an exciting project for the development of new plant proteins as a sustainable and functional food alternatives. And currently, I am doing a PhD in Food Sciences and Technology related on «Structuring alternative proteins extracted from grass and other forage species for food applications» in partnership with University College Cork and Teagasc Food Research Centre.

My first publication

The research work that I did during my end of degree project was published as a part of the paper: L. Laguna, A. Rizo, D. Pineda, S. Pérez, A. Gamero, A. Tárrega. Roughness perception caused by resistant starch in relation to its behaviour in the mouth. Published in Food Hydrocolloids.
